Danno, I'm not sure I understand what your asking about/mentioning. And I don't take it as being prick-ish.... lol.
But.... What does ground clearance, and how much tire we are using have to do with wanting lowering the pegs for comfort? Unless.... you are wanting to know if these can be used, and still have enough room to use all the contact patch of the tire. I believe they are still high enough that I would run out of rubber before I drag them in a corner. But I'm not completely sure. I know they haven't touched yet.
I bought these so my knees don't have to bend up as far, not so I can lean over farther. I have nerve damage in one knee, and need all the help I can get (comfort wise).
At the moment, I don't have access to the bike to take pics. If you google the tread design of the Metzler M5 interact that comes standard on the 2012 zx14r, I am using the tire to just below where the elephants trunk is, and the hash near his back/tail - nearest the edge. so probably 1/4" left?
I don't push any harder on the street since I got rid on my 03 R1 in 07-08. That summer, 3 guys wrecked in front of me; 2 of them I had to dodge - or run them over. That made me walk away from bikes for a while, so I didn't become the next victim. Now, if I'm riding with some people that want to outride me in the twistys, I take it at my own pace, and catch back up on the straights.
This page has a picture of the tread. Hope this helps.
